Ingredients

One 6 oz. package Farmhouse® Broccoli au Gratin Rice

2 Tablespoons butter or margarine

1 cup onion, chopped

1 red bell pepper, chopped

1 lb. boneless, skinless chicken breasts, cut into 1/2” cubes

2 cups water

3/4 cup milk

14 oz. frozen broccoli florets, cooked per package directions and drained

2 Tablespoons Dijon mustard

1 cup shredded cheddar cheese


Preparation

  1. Melt butter in medium skillet over medium heat. Add onion and red bell pepper and cook until soft, about five minutes, stirring frequently.
  2. Add chicken, water, rice and contents of seasoning packet and bring just to a boil. Reduce heat to low boil and cover. Cook for 22 minutes then add broccoli and mustard. Cover and cook for 3 minutes more.
  3. Remove from heat, uncover, and stir in cheese.
  4. Let stand for 5 minutes before serving.
