Ingredients
One 6 oz. package Farmhouse® Mexican Rice
One 14.5 oz. can black beans, drained and rinsed
2 cups sour cream
1 cup Monterey jack cheese, grated
1 cup cheddar cheese, grated
One 7 oz. can green chilies, diced
Preparation
- Prepare rice according to package directions. Cool.
- Combine cooled rice, black beans and sour cream.
- Combine cheeses together.
- Grease a 2-quart casserole dish.
- Spread 1/2 of rice mixture into bottom of prepared casserole dish. Sprinkle 1-1/4 cup of mixed cheeses on top of rice mixture in casserole dish.
- Spread green chilies on top of cheese. Top with remaining rice mixture. Sprinkle with remaining cheese.
- Bake in preheated 350° F oven for 30 minutes.
