Chicken Cordon Bleu
Serves 4-6
Ingredients
One 6 oz. package Farmhouse Herb & Butter Flavor Rice
4 boneless chicken breasts, halved
1/4 teaspoon salt
1/8 teaspoon pepper
2 Tablespoons butter or margarine
1-1/2 cups hot water
1/4 cup white wine
4 slices ham (about 2 oz.)
4 slices Swiss cheese
1 Tablespoon finely chopped parsley
Directions
- Season chicken breasts with salt and pepper.
- In large skillet, brown chicken on both sides in butter or margarine. Remove from pan; set aside.
- In the same pan, combine hot water and wine and bring to a boil.
- Add contents of rice and seasoning packet.
- Reduce heat, top rice mixture with browned chicken breasts layering ham slices on top. Cover and simmer 15 minutes.
- Top chicken with cheese slices. Cover and simmer 5 minutes longer until liquid is absorbed and cheese is melted.
- Before serving, garnish with parsley.
