Cheesy Shells & Italian Sausage

Serves 6

Ingredients

One 6.2 oz. package Farmhouse White Cheddar Pasta
1 lb. Italian sausage (sweet and hot), casings removed
1-1/2 cup sliced mushrooms
2 cloves garlic, minced
1/2 cup diced tomatoes, fresh or canned
1/2 cup frozen peas, thawed
3 Tablespoons chopped fresh parsley, divided
Salt and pepper to taste
2 Tablespoons grated Parmesan cheese

Directions

  1. Prepare pasta according to package directions; set aside.
  2. In large skillet, brown sausage, breaking up large lumps with back of spoon. Drain off excess fat.
  3. Add mushrooms and garlic; sauté until tender.
  4. Add prepared pasta, tomatoes, peas, 2 Tablespoons parsley, salt and pepper to taste.
  5. Stir over medium heat until heated through.
  6. Before serving, top with remaining Tablespoon of parsley and Parmesan cheese.
