Athenian Rice

Serves 4

Ingredients

One 6 oz. package Farmhouse Herb & Butter Flavor Rice
1 clove garlic, minced
1 teaspoon grated lemon rind
1 Tablespoon olive or vegetable oil
1-3/4 cups water
1 teaspoon oregano
1 cup sliced scallions
1/4 cup frozen spinach, thawed and squeezed dry
1 cup chopped fresh tomato
1/4 lb. finely crumbled feta cheese
1/4 cup chopped fresh parsley
1/2 cup black olives, halved
1 Tablespoon lemon juice
2 teaspoons chopped fresh dill

Directions

  1. In a large saucepan, sauté garlic and lemon rind in oil until tender.
  2. Add water and oregano; bring to a boil.
  3. Add rice and contents of seasoning packet; return to a boil and add scallions.
  4. Reduce heat to low; cover and cook 20 minutes.
  5. Gently combine cooked rice mixture with spinach, tomatoes, cheese, parsley, olives, lemon juice and dill.
