Coconut Lime Rice Pudding
SERVES 4
Prep time: 10 min. Cook time: 1 hour Total time: 1 hr, 10 min.
INGREDIENTS
1/2 cup Farmhouse® Long Grain White Rice
1 cup water
2-1/2 cups milk
1 cup canned unsweetened coconut milk, stirred well
1/3 cup sugar
1/4 teaspoon salt
2 teaspoons grated lime zest
2 Tablespoons lime juice
1/2 teaspoon vanilla
DIRECTIONS
- Place rice and water in medium saucepan with a heavy bottom. Bring just to a boil and then reduce heat to low boil. Cover and cook until liquid is absorbed, about 15 minutes.
- Remove from heat and add remaining ingredients except the vanilla. Mix well.
- Return to heat and cook over medium low heat, stirring frequently until thickened, about 40 minutes.
- Add vanilla and serve warm.
