Chicken Curry Rice Salad

Ingredients
One 6 oz. package Farmhouse® Chicken Rice
3/4 cup mayonnaise
1-1/2 Tablespoons lemon juice
1-1/2 teaspoons curry powder
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups chicken breasts, cooked and coarsely chopped
1/2 cup scallions, chopped
1/2 cup red bell pepper, chopped
1/2 cup golden raisins (optional)
1/2 cup peanuts, chopped (optional)
Directions
- Prepare rice according to package directions. Cool.
- In small bowl, combine mayonnaise, lemon juice, curry powder, salt and pepper.
- Combine rice, chicken, scallions and red bell pepper. Add optional raisins and/or peanuts.
- Add mayonnaise mixture and combine.
