Spanish Chicken & Rice Skillet
Serves 6
Ingredients
One 6 oz. package Farmhouse Spanish Style Rice
1 cup chopped onion
3/4 cup chopped green bell pepper
2 cloves garlic, minced
2 Tablespoons olive oil
1 lb. sliced, boneless, skinless chicken
1 cup water
One 14.5 oz. can diced tomatoes, undrained
2 teaspoons Italian seasoning
1/3 cup sliced pimento olives
Directions
- In a large skillet, sauté onion, bell pepper and garlic in olive oil until tender.
- Add chicken and cook until no longer pink.
- Add water, tomatoes, rice, contents of seasoning packet and Italian seasoning; bring to a boil.
- Reduce heat, cover and simmer 15 minutes.
- Add olives and cook 5-10 minutes longer or until moisture is absorbed.
