Pinwheel Meatloaf
Serves 6
Ingredients
One 6 oz. package Farmhouse Broccoli au Gratin Rice
1-1/2 lbs. lean ground beef
3/4 cup dry bread crumbs
2 eggs beaten
1/3 cup water
1/4 cup minced onion
2 cloves garlic, minced
Salt and pepper to taste
1/4 lb. thinly sliced ham
Directions
- Preheat oven to 350° F. Prepare rice according to package directions. Set aside.
- In large bowl, combine beef, bread crumbs, eggs, water, onion, garlic, salt and pepper; combine well.
- Spread meatloaf mixture onto aluminum foil, making a 10" x 8" rectangle.
- Lay ham slices over meat mixture leaving a 1-inch rim along edges. Top ham with cooked rice mixture.
- Roll up meat and rice mixture jellyroll style from long end. Seal edges and patch any gaps.
- Transfer to baking sheet and bake at 350° F for 45-50 minutes.
- Let stand 10 minutes before slicing.
