Pasta Primavera

Serves 4

Ingredients

One 4.9 oz. package Farmhouse Parmesan Pasta
1/2 cup sliced mushrooms
1/4 cup finely minced onion
2 cloves garlic, minced
2 Tablespoons butter or margarine
1-1/3 cups hot water
2/3 cup milk
2/3 cup broccoli flowerets
1/2 cup sliced carrots
1/2 cup sliced red bell pepper
1/3 cup frozen peas, thawed
1/4 cup grated Parmesan cheese, (optional)
2 Tablespoons chopped fresh parsley

Directions

  1. In a large saucepan, sauté mushrooms, onions and garlic in butter or margarine until tender but not brown.
  2. Add water, milk, pasta and contents of seasoning packet; bring just to boil.
  3. Add vegetables, reduce heat to medium-low and cook uncovered for 10 minutes, stirring frequently.
  4. Transfer to serving dish.
  5. Before serving, top with Parmesan cheese, if desired, and parsley.
